Budget Friendly Cookie Recipes



I keep four main cookie recipes that I can whip up in a snap. I'm used to my kids volunteering me for classroom goodies and fundraising bake sales. They usually tell me all about it the night before they need them! So these are inexpensive and really fast. If you have a squeeze handle ice cream scoop, you can pop these onto baking sheets in less than a minute!





SnickerDoodles



1 cup margarine, softened
1 1/2 cups sugar
2 eggs
2 3/4 cup all purpose flour, sifted
2 tsp baking powder
1/4 tsp salt
1 Tbs vanilla
1 cup Sugared Cinnamon-recipe follows

Preheat oven to 400°F.
Sift together flour, baking powder and salt. Set aside. Beat margarine and sugar until fluffy. Add eggs one at a time beating well after each. Add vanilla and mix well.
Form dough into ball using an ice cream scoop to keep dough uniform in size. Roll in sugared cinnamon and place on ungreased baking sheet 2 inches apart. Bake for 10 minutes. Remove from baking sheet immediately. Cool on wire racks. Store in air tight container.

Sugared Cinnamon





Mix 1 Tbs Cinnamon with 1 cup sugar. Store in air tight container.
