Summer Pasta Salad






This is one of those easy pasta recipes that can be served straight from the fridge! It's great for summer pot-lucks and family picnics because you can make it a day or two ahead of time. I like to serve a simple Spice bunt cake sprinkled with powdered sugar for dessert.


1 16 oz package small to medium sized pasta (like Rotelle)
1 tsp season salt or to taste
1 tsp garlic powder
1/2 tsp black pepper
2 fresh tomatoes, diced
3/4 cup mayonnaise
1 tbs mustard
1/2 cup grated Parmesan cheese
2 cups cooked chicken, diced


Cook pasta according to package directions. Drain and rinse in cold water. Add remaining ingredients and mix well. Serve cold. Serves 6.








Picnic Pasta



1 lb Rotelle pasta
½ cup Italian Dressing
1 Tbs Italian Seasoning
1 cup black olives, roughly chopped
8 oz Pepperoni
1 large tomato, diced
1 onion, diced
3 garlic cloves, minced
½ tsp crushed red pepper
½ cup Parmesan cheese, shredded

Cook pasta according to package directions except, reduce cooking time to 10 minutes. Drain and rinse in cold water. In mixing bowl, combine remaining ingredients and mix thoroughly. Add pasta and mix well. Serve cold straight from the fridge or take to summer parties and picnics!
