Simple soups packed with flavor!





I love taking simple soup recipes and making them fabulous! If it wasn't for soup, I wouldn't eat half the vegetables I eat now. It's the only way I'll eat kale, spinach and onions. I hide my celery, watercress and squash in their own veil of seasoned broths too. It's kitchen magic!

Okay, I admit I hate vegetables. We've never been close. To become good friends, I had to toss them into the food processor.They magically became invisible to my taste buds! This magic isn't limited to savory soups! Check out my Meatloaf recipe and Creamy Vegetable Soup.

When I made my first 'magic' recipe for my picky eaters, I told my kids that the 'green specks' were just 'spices'. It's wonderful to see my kids scarf down spaghetti or inhale homemade pizza with kale or carrots hidden inside. I can't taste it and neither can they! I love kitchen magic. It's like ...eating a ton of chocolate and losing 5 pounds!

Try this simple soup recipe in YOUR magic kitchen and I bet you'll have your family eating the little 'green spices' too!

King's Favourite Soup


3 Tbs margarine
1 small onion, cut into eighths
1 clove garlic, minced
½ cup parsley, chopped
pinch Red Pepper Flakes
4 medium potatoes, cut into eighths
3 cups chicken broth
¾ cup whipping cream (or heavy cream. you can use powdered milk to make a rich, heavy cream!)
1 cup milk (powdered milk and water!)
¾ tsp salt



Melt margarine in a large pot and add onion and garlic. Simmer 1 minute. Add potatoes, pepper and broth and continue simmering until potatoes are very tender.


Purée soup in food processor with parsley. Add cream, milk and salt. Heat through and serve. Serves 4
