Frugal Chicken Recipes






The same old chicken recipes over and over again can get boring. I make sure my family gets a variety of chicken dishes every month. I have to also make sure that it fits into my grocery budget. I love cooking different dishes and my family never gets bored with chicken!

I felt bad when I first started buying cheaper cuts of chicken but you know what I found out? My family didn't notice the difference! They could only tell the difference when I left the pieces whole, like fried or baked chicken. That helped my meat budget a lot!

Cheese N Chicken Casserole



4 Boxes Macaroni and Cheese
4 baked chicken thighs, diced or fork shredded
2 cups finely chopped kale or spinach
2 cups seasoned bread crumbs-recipe follows

Cook macaroni according to box directions and pour into large casserole dish. Add chicken and kale, mixing thoroughly. Sprinkle with bread crumbs. Bake at 350°F until heated through, about 20 minutes. Serves 10-12. (Great as left-overs!)

Seasoned Bread Crumbs



6 slices toasted bread, dry
3 Tbs margarine
1 tsp seasoned salt
1 tsp garlic powder



In food processor, add bread, garlic and seasoned salt. Process until coarse crumbs. Melt margarine in skillet over medium high heat. Add bread crumbs and cook until lightly brown, about 5-8 minutes. Store in air tight container.
