A variety of Easy Recipes

Easy recipes don't have to be extremely inexpensive, but it helps! This little rice recipe can be made in about 30 minutes! The best part is that you can add garlic bread and a green salad to this dish for a delicious dinner! You'll find really easy recipes here that aren't the cheapest but they will get you out of the kitchen fast. Sometimes, it's okay to pay a little more just for the convenience, if it's in your budget!

Royal Rice

1 lb ground beef
1 lb Rice
1 32 oz jar spaghetti sauce

In large pot add rice. Cover with water that measures up to the first knuckle line of your index finger (size doesn't matter here!) when lightly touching top of rice. Cover and bring to a boil. Do NOT stir. Immediately reduce heat to lowest setting. Cook for 20 minutes or until all liquid is absorbed. Do NOT remove lid.

In the meantime, brown ground beef in a large skillet. Drain and set aside. When rice has absorbed all liquid, remove from heat and let stand for 5 minutes. Add spaghetti sauce to ground beef and heat through. Add rice gently mixing until well combined. Serves 6.

Creamy Applesauce Cake

1 yellow cake mix, baked in 8 inch pans as directed on box
2- 8 oz packages cream cheese, softened
3 cups unsweetened applesauce
1 tsp cinnamon
1/4 cup powdered sugar

Horizontally slice each cake layer giving you four layers of yellow cake. Set aside. In bowl, combine cream cheese, applesauce and cinnamon. Beat on high speed until well combined. Spread onto first layer of cake and top with second layer. Repeat using all layers and filling. Sift powdered sugar on top. Serves 8.

I love finding easy recipes but sometimes that means sacrificing taste for simplicity. This recipe is so scrumptious that it can be served as a dessert! But go ahead and have it for breakfast too. Your mom would totally approve! I did, I asked her. Yesterday when we were...oh gotta go, my pen's out of ink!

Strawberry Pancakes

2 1/2 cups flour
4 tsp baking powder
1/2 tsp baking soda
3 Tbs sugar
2 Tbs oil
2 Tbs milk
1 tsp vanilla or 2 tsp orange juice
2 eggs
1 1/2 cups fresh strawberries

Sift dry ingredients together. Set aside.Add oil, milk, eggs and strawberries to food processor or blender. Blend for 30-45 seconds or until well combined. Coat a fry pan or griddle with non stick spray and heat on medium high.

Scoop batter using a 1/4 measuring cup and pour into center of hot pan. When bubbles are bursting on top side, underside should be golden brown. Turn and cook about 1 minute or until underside is golden brown. Add cream cheese and strawberry jam for a special breakfast!

Serve with whipped cream and chocolate syrup for a great dessert!
