Easy Fruit Recipes

There are some fruit recipes that bring back childhood memories, recent summer picnics or past Sunday dinners. This recipe brings back memories of when my parents were picking peaches up in Washington state.
Mom would bake this cake on Sunday night and we would have it for breakfast during the week with ice cold milk. We would get up about 3:00 am and be out in the orchard, usually just before dawn. There wasn't much time for mom to cook breakfast! And thank goodness because bacon and eggs can't hold a candle to this scrumptious treat!


Spiked Peach Cake



1 cup butter or margarine
1 cup brown sugar, packed
3 eggs, room temperature
1 16 can peach slices, drained, chopped
3/4 cup milk
2 Tsp brandy, or Rum flavoring
2 1/2 cup flour
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Preheat oven to 350° F. Grease & flour a 12 cup Bundt pan, set aside. In large mixing bowl cream shortening, brown sugar and eggs. Add peaches, milk, brandy, flour, cinnamon, baking powder, baking soda & salt. Beat at low speed until blended, scraping bowl constantly.
Beat at medium speed for 2 minutes, scraping bowl occasionally. Pour into prepared pan. Bake for 50-55 minutes or until center tests done with a wooden pick and springs back when touched lightly. Cool on wire rack for 10 minutes. Transfer to serving dish. Cool Completely before glazing.

GLAZE

1/3 cup powdered sugar
2 Tbs brown sugar, packed
3-4 Tbs milk

In small mixing bowl combine powdered sugar & brown sugar. Stir in milk 1 tsp at a time until glaze is smooth and of desiredconsistency. Drizzle over cooled cake. Serves 10-12



This fruit recipe can withstand the hottest summer!

Watermelon Sipper




1 3/4 cup watermelon, seeded, peeled and cubed
3/4 cup unsweetened apple juice
1 Tbs lemon or lime juice
4 ice cubes
1/2 cup Squirt or 7-UP

Blend first 4 ingredients together until smooth. Add remaining ingredients and serve!

If you want to turn this into a shake, eliminate the 1/2 cup Squirt and add 1/2 cup lemon flavored yogurt, 1/2 cup very soft Tofu or 1/2 cup vanilla flavored ice cream!
