Mom's Shepherds Pie





Shepherds pie is a classic dish for so many families, mine included. It's really versatile too. Change the veggies to green beans or corn for a different flavor. Try putting the potatoes on the bottom and sprinkle the cheese on top of the meat mixture.

Family Sized!



2 tbs oil
1 cup carrots, finely chopped
1 small onion, finely chopped
3 cloves garlic, finely chopped
3 tbs dry brown gravy mix
1 cup beef broth
2 lbs ground beef
1 10 oz box potato flakes
1 8 oz package cream cheese, room temperature
1 cube margarine, room temperature
4 1/3 cups boiling water
2 1/2 cups milk, hot not scalding
1 tsp salt
1 tsp black pepper
2 cups grated cheddar cheese

Heat oil in large skillet and saute carrots, onion, and garlic until tender. Add ground beef and cook until browned and well done. Drain. Add dry gravy mix to beef broth, add to ground beef mixture. Cook until thickened. Remove from heat. Pour into 13x9x2 inch baking pan. Set aside.

In large mixing bowl, whisk together margarine and cream cheese until smooth. Set aside.



Pour entire box of potato flakes on top of cream cheese mixture. Add hot milk and boiling water and whisk thoroughly. Do not use a mixer. Add salt and pepper. Spread on top of meat mixture. Sprinkle cheese over top of potatoes. Bake at 350° 20 minutes or until heated through and cheese is melted. Serves 8.
