Easy Vegetarian Recipes





There are days when vegetarian recipes can't stand alone. I'm talking about the days when some of my family wants meat and one family member remains against it. On those special days, I usually cook two main dishes that compliment the side dishes.

This one seems to be cooked quite often in our house. I make the steamed rice, stir-fry the veggies and divide them into dishes. I then add chicken or pork to one and tofu to the other. It still gets me out of the kitchen fast and adds just one dish to clean up. I hardly notice the effort and everyone's happy.

Vegetarian Stir-Fry



1 package firm Tofu, cubed
1 lb Broccoli
2 packages brown gravy mix
3 cups water
2 Tbs soy sauce
1/2 tsp sugar

In small bowl, whisk together gravy mix, cold water, sugar and soy sauce. Set aside.


In hot wok, add 2 Tbs oil. Add cubed tofu and broccoli. Stir-fry for 3 minutes. Add gravy mixture and cook for additional 3 minutes or til broccoli is crisp tender and gravy is slightly thickened. Serves 4.


Creamy Vegetable soup



1 1/2 quarts of water
1 onion, chopped
1 head cauliflower, chopped
1 head broccoli, chopped
4 medium potatoes, diced
1 tbs salt or to taste
1/2 tsp black pepper
2 garlic cloves or 1 tsp garlic powder
1 can evaporated milk

1/2 cup cold water
1/3 cup all-purpose flour

In large pot, add 1 1/2 quarts water, potatoes, cauliflower, broccoli, onion, salt and pepper. Boil until vegetables are soft. Mash with potato masher or process in food processor 30-45 seconds until smooth.



Pour soup back into pot, add evaporated milk. Make a paste with flour and 1/2 cup water, whisk into soup. Return to simmer for 1 minute and remove from heat. Serves 6.
