Easy Mexican Recipes





These easy Mexican recipes will get you out of the kitchen fast! I love to cook but I can't spend all day, every day in the kitchen. We're busy women! Because these Mexican recipes are so budget friendly, you can add a dessert without over spending! I make Mexican Banana Splits on Nacho Night! I think my kids could live on burritos alone, and when I make these enchiladas, everybody shows up for dinner!


Beef N Bean Enchiladas



1 lb ground beef
1 teaspoon garlic powder or 1 small clove, crushed
1 large can refried beans
1 small can tomato soup
2 large cans red enchilada sauce
2 cups Pepper-jack or Colby-Jack cheese, shredded
18 corn tortillas
13 X 9 X 2 baking dish

Preheat oven to 350°.

Cook ground beef with garlic until crumbled and no longer pink. Drain. Add refried beans, mixing well. Set aside.

In large microwave safe mixing bowl combine tomato soup and 1 large can enchilada sauce. Microwave until very warm to the touch. Set aside.

Stack tortillas on small plate and microwave until hot, about 1 1/2-2 minutes. Dip 1 hot tortilla in tomato soup mixture and place in baking dish.

Place about 2 TBS of meat mixture onto tortilla and roll up jellyroll style. Repeat with remaining tortillas stacking as necessary.



Spoon any remaining meat mixture on top of enchiladas and cover with tomato soup mixture. Pour remaining can of enchilada sauce over all enchiladas drenching ends first. Sprinkle with shredded cheese. Bake until heated through and bubbly. Serves 6.
